Janet's Family Cornbread

 

 

1 Cup Soymilk

1/4 Cup Oil (Olive, Corn, Safflower or Walnut)

1/4 lb Tofu or 1 Egg

1 Tbsp. Maple Syrup

 

1 Cup Whole Wheat Pastry Flour

1 Cup Corn Meal

1 tsp. Sea Salt

1 Tbsp. Baking Powder

 

Preheat oven to 425 degrees.

Combine all dry ingredients.

Put all wet ingredients in a blender and mix until smooth.

Add wet ingredients to dry and combine until smooth.

Cook in oiled pans or muffin tins for 20-25 minutes or until desired crispiness.  Crisper if cooked in cast iron.
